During the picking process, Yunnan green tea only uses the youngest tea leaves, two leaves and one bud. It is then taken through, twisting, drying, and other processes. Due to high-temperature, timely twisting, and rapid drying, it controls the activity of enzymes and the oxidation of polyphenols, preventing the fermentation of buds and keeping tea leaves green. Typically when brewed it forms a rich taste, long-lasting aroma, and aftertaste, yellow-green infusion.
